Grown on the steep, varied elevations surrounding Mount George and crafted in Palmaz’s remarkable gravity-flow winery, the 2019 is a polished, classically proportioned Cabernet with layers of blackberry, cassis, black cherry and plum framed by graphite, cedar, tobacco and subtle toasted oak.
The 2019 growing season was especially favorable in Napa Valley, with a long, even ripening period that allowed Cabernet Sauvignon to develop exceptional concentration while retaining freshness and structural balance. Palmaz takes full advantage of that harmony, producing a wine that is powerful without feeling heavy. Vinification
Palmaz Vineyards completely eliminates mechanical pumps by using a 18-story underground gravity-flow system carved directly into the volcanic rock of Napa Valley's Mount George. Instead of forcing delicate liquids through motorized blades and tubes, the winery relies entirely on nature's propulsion system to guide the grapes and wine downward through the vinification stages. Mechanical pumps cause violent turbulence and friction. This mechanical agitation breaks apart delicate tannin polymers and grape skins, leading to excessive oxidation and harsher, bitter flavors. By relying strictly on gravity, the wine's molecular structure remains undisturbed, resulting in a cleaner texture and smoother, silkier tannins.
