N.V. AUSTIN Cabernet Sauvignon is a tribute to those who believe in Paso Robles and all of its greatness. Paso Robles entices those individuals to be their best, create the best from the land and all that it produces. We source from Paso Robles vineyards located mainly on the east side of the appellation. They all have one thing in common: Gravely-to-loamy soils with calcareous (ancient seabed) deposits. This helps with quality consistency and makes for a true “Paso” flavor profile. The Paso Robles AVA districts we liked most for this blend are Creston, Estrella and San Juan, which is where the bulk of the vineyards are located.
