About This Wine
The temperature variation between day and night greatly contributes to the unique freshness and bold flavor of our wines. Our production process includes a prompt pressing of the fruit and a 48-60 hour cold settling period, followed by vinification in stainless steel tanks at low temperatures for 20-25 days. This allows for the preservation of the fruit's natural characteristics, before aging on the lees for 4-5 months with occasional stirring.
