From the winemaker: The grapes are crushed as whole clusters and immediately pressed. The wine then undergoes a long, cool fermentation over several weeks at 16 -18°C (61-64°F) entirely in stainless steel to preserve the delicate fruit flavors. The wine is lightly fined and filtered before bottling.
