A good bottle brings something to dinner. A great backstory gives you something to say when someone asks what you are pouring. Talbott Sleepy Hollow Chardonnay arrives with coastal California roots, a family connection to luxury neckwear, and a very convincing case for ordering the creamy pasta.
Before we get to the grapes, we need to talk about the ties. Yes, actual ties. This Chardonnay has a wardrobe department.

The family business had a dress code

In 1950, Robert and Audrey Talbott moved to Carmel with their son, Robb, and started a luxury tie company. Food & Wine recounts the early days: Audrey sewed bow ties on the back porch, while Robert sold them from his station wagon along the California coast. A rather chic origin story for a business on wheels.
Buying silk took the family overseas, where French wines caught their attention. Their interest in Burgundy eventually helped inspire a California wine venture: Robb and his father launched Talbott Vineyards in 1982. Imagine going shopping for fabric and coming home with a vineyard ambition. Some people really know how to extend a work trip.

 

What makes a tie luxurious

Here is a detail for the person at the table who appreciates good tailoring: Robert Talbott’s Newman seven-fold tie uses an entire yard of silk, folded to create its body without interlining. The brand describes a fuller knot and richer drape. It is a useful reminder that luxury often lives in construction you cannot immediately see. The wine parallel is irresistible: what happens before the finished product matters.

The vineyard has its own air conditioning

The vineyard came before the winery. Sleepy Hollow was first planted in 1972. Talbott Vineyards launched in 1982, then acquired Sleepy Hollow in 1994. Three dates, three different milestones. Excellent material if your dinner companion enjoys a plot twist.

One vineyard can have several personalities. Sleepy Hollow grows both Chardonnay and Pinot Noir. Differences between its parcels and blocks give the winemaking team different fruit to work with. “Same vineyard” does not mean every row behaves the same way.

There is a famous older vintage. The 1990 Sleepy Hollow Chardonnay received 100 points from Wine Spectator in a retrospective tasting in 1997. That is a story about one particular vintage, rather than a score for every bottle bearing the name. Still, quite an entrance for a wine with seven years behind it.

When you pour, notice the texture as well as the fruit: how rounded it feels, how fresh the finish is, and what changes with the next bite.



 

Give the wine a good dinner companion

Lemon and herb roast chicken. The citrus echoes the wine’s brighter notes, while the browned skin and savory juices welcome a rounded white. This is the pairing for “I cooked” without “I spent the entire evening cooking.”


Scallops with brown butter. The richness of the butter benefits from a fresh counterpoint. Take a bite, then a sip, and notice how the combination changes your impression of the wine. You have just hosted a tasting. No clipboard required.


Creamy mushroom pasta. The sauce gives the wine’s texture something to meet, and mushrooms bring a savory contrast to the fruit. Add Parmesan. Cancel nothing; this was the plan all along.


One small experiment before dessert

Serve it chilled, then revisit it as it warms slightly in the glass. Do the aromas become easier to notice? Does the texture seem different? Ask everyone for one impression before sharing yours. The person who says “pear” and the person who says “Sunday lunch” can both contribute to the conversation.
